Whole Grain Banana Pecan Pancakes

Hey ya’ll (channeling my inner Paula Dean… pecans just make me think of her!).  These pancakes aren’t for those who don’t love whole grain.  There is nothing white floury about these babies.


1 c quick oats

1/4 c whole wheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 scoop vanilla protein powder

2 Tbsp brown sugar (1 used 1 Tbsp Splenda Brown Sugar Blend)

1/4 c pecans, chopped

Mix wet before adding to dry:

3/4 c milk

1 egg

1/2 tsp vanilla

I let the batter sit for about 10  mins to let the oats soften a bit:

Heated a skillet on medium hit and sprayed generously with Pam.  Using a 1/4 c scoop I got about 10 pancakes from this batch.  Check them out!

I ate two and was incredibly full!  I would like to use some yogurt in place of the milk next time, but I didn’t have any.

Calories: 200, 7g fat, 26g carbs, 6 g sugar, 8g protein
