WIAW – Cold Foods Edition
As I’m sure you’re aware, it’s been HOT. Pittsburgh has been hovering around the 90 degree mark, but I know it’s worse in other parts of the country.
Honestly, I’d rather be hot and sweaty than cold any day of the week. Thinking back to February in Pittsburgh makes July and August seem heavenly.
How do I benefit from my mother’s obsession with double dark chocolate gelato (other than stealing a spoonful every once in a while)?
Perfect overnight oats container.
This mix was 1/3 cup oats, 1.5 Tbsp almond butter, 1/3 cup water, 2/3 cup almond milk, scoop of designer whey, 1 tsp chia seeds, a few drops of stevia, and lots of cinnamon.
Mid morning snack? A 2×2 bite of cake from the breakroom. Yes, I’m an office lady. But this cake was PERFECT. The cake itself was incredibly soft and moist, the icing was serious business. You know, thick, gritty, super sugar saturated buttercream. I can’t take that thin, oily, shiny type of icing. The true test? A quick swipe of the finger over the corner of the cake box (it would just be wasted after all) to ensure it was good icing and not bad icing. Yes, the oily kind is usually prettier to look at, but this good, thick icing seems to be hard to come by these days and I couldn’t resist a bite.
Is it icing or frosting? Frosting on cupcakes and icing on cakes? What’s on cookies? Icing?
Just to balance out the bite of cake (and all of the over analysis that went along with it), I had a sliced orange. Originally this was going to be my after lunch snack but my oatmeal only kept my tummy quiet until about 10:15 am today. Maybe I need to revisit my breakfasts with staying power post.
Lunch followed around 12:30 – Mexican inspired – tuna mixed with black bean and corn salsa, over green leaf lettuce and about 1/4 of an avocado. Much better combination that I had expected!
3pm-ish snack: left over fruit salad from my friend’s bridal shower (recap still to come!).
Hot yoga was at 6:45 pm this evening, so I knew I’d need some protein and carbs to hold me over. Light & Fit vanilla and 1/4 cup of my newly purchased granola. Delicious! I also munched on some pasta salad and handful of peanuts before I left.
Post yoga (and post shower – it was a super sweaty class) smoothie: my current watermelon protein smoothie obsession, with a few cashews instead of chia seeds. The raw nuts really add a salty, savory flavor.
The perfect end to my eats for the day? A square of dark chocolate from my favorite chocolate shop. Yes, even this was in the fridge – you can’t take any chances with good chocolate in the summer time!
Which icing do you prefer? Thin and smooth or thick and gritty? When is it icing and when is it frosting?
