Newlywed WIAW

Good morning friends!  I might be a little late to the WIAW party, but better late than never!  I missed it these past two weeks.  Thanks again to the fabulous Jen for being our hostess. 

Peas and Crayons

Check out this beautiful Pittsburgh sunrise, snapped on my way in to work.


Less beautiful but incredibly delicious breakfast: plum chia pudding inspired by Laura’s peach cobbler chia pudding  – I also added some protein powder and extra almond milk to help fill me up after a 5:45 spin class.


Lunch was leftover pasta that my father made the night before.  Typically I’m not a big pasta fan, but my father made lasagna and saved some sauce before adding meat to make me my own baked penne version, complete with whole grain pasta – I couldn’t turn it down!  He also adds a three cheese mixture that is to die for (ricotta, mozzarella, and cottage).  I threw in some mushrooms and zucchini to increase the nutritional value.


Mid afternoon pick-me-up: pumpkin spice coffee with Splenda and skim – guilt free!


After work snack: handfuls of granola and some strawberries.

Dinner was a take out repeat from my very first WIAW:


Roasted pepper panini on wheat flatbread from a favorite local wood fired pizza place.  The *husband* ( 😉 ) and I also split a slice of their white pizza, complete with frozen grapes for dessert.

My evening snacks included a blueberry yogurt and a handful of chocolate goldfish.  They are PERFECT for a chocolate craving.

Thanks for all the pumpkin mania feedback yesterday – some of the items on my must try list are pumpkin granola (from Ashley’s recipe), and Julie’s protein pumpkin pancakes

    That panini looks great! I don’t live too far from Pittsburgh, so next time I visit I may have to find out where you got it!:)

    That panini looks absolutely delicious! And i’m going to have to check out chia pudding – I finally gave in and bought chia seeds (a LOT more expensive than flax) and now I want to experiment with them!

    I’ve been bookmarking soup recipes! I’ve been craving a really good bowl of soup lately! I’m also currently looking for good apple jam recipes! One of my clients from work has been bringing me in bags of hand picked apples from her tress each week and I now have a surplus that needs to been used up quickly!

    I really need to check out chia pudding. I had chia in my regular oats. It was good, but it didn’t knock my socks off.

    mmm that chia breakfast looks really creamy. I had a peach for breakfast today too!
    I checked out your pumpkin froyo recipe and will definiately need to make that as the weather cools down.
    and the picture of the morning is so beautiful. I’d love to drive into that!
