Breakfast (actually todays, since I showed you yesterday’s indulgence): breakfast cookie (1/3 c oats, 1/2 scoop protein powder, 1 Tbsp greek yogurt, 1 Tbsp soy milk) topped with homemade lemon curd (to die for!), greek yogurt, and berries.
Snack (not pictured): tiny apple with Walnut butter
Lunch: Creamy Spaghetti Squash Primavera (semi-homemade) with baby carrots and red grapes (not pictured)
Okay fitness experts, I need your advice! The one thing I’m able to use at the gym is a bike that looks like this:
I can actually fit my boot comfortably on the pedal and get a good cardio workout because it involves my arms as well. I figured I was just out of shape from not working out for a few weeks because it was really challenging to do a solid 40 minutes (10 miles according to the display on the bike). From a doing a bit of research, it’s apparently called an “Airdyne” bike and I learned that it gets harder depending on how hard you’re peddling – now my exhaustion makes sense!
Of course I wanted to know how many calories I was burning, but the display did not allow for age/weight adjustments. According to the bike, I burned 310 calories (which seems low), but according to my heart rate monitor (which calculates it based on age, sex, and the average heart rate during my work out) I burned 575 calories (which seems high). Fitness specialists: I’m assuming my heart rate monitor is more accurate?
Dinner: roasted vegetable and grilled goat cheese sandwich (inspired by a delicious goat cheese grilled cheese from Tina’s blog). I had no regular bread so a sandwich thin had to work! The veggies were left over from a skewer dinner last week.
Dessert: more of my deadly banana cream pudding.
Happy Wednesday all! More than halfway to the weekend!

You made your own lemon curd?! Wow impressive! That breakfast looks really yummy as does that banana pudding, yumm 😀
I can’t take credit for the lemon curd, my awesome aunt made it!
Your breakfast looks awesome! If I took a picture of mine it would be an granola bar :)…must be healthier
I would think the HRM is more accurate. Mine isusually opposite though.. the machines say I burn more then my monitor does.
Also weird.. when I run with my Garmin (which has a HRM) .. that tells me I burna buot 102 cals a mile.. but my Polar F7 – tells me I don’t even burn 100 in a mile!
Homemade lemon curd? Yes, please! I’ll have to figure out how to make that. I made a citrus marmalade once, so I imagine it might be similar?
What I’m REALLY jealous of is the spaghetti squash…it’s what I miss the most about winter. However, I am lucky that here in Texas we’ve already got delicious watermelons rolling in…so I’m supplementing my spaghetti squash obsession with those. 🙂
I’m not sure honestly, my aunt made it and was nice enough to share! She’s an amazing baker.
I can’t wait for fresh watermelon and other summer produce – we are behind here in Pittsburgh!
The lemon curd looks so good!!! Do you have a recipe?
My aunt (who is an amazing baker) made it – I will find out her recipe and post it soon!
id trust the HR monitor! machines are never right! I LOVE ur eats!! esp ur breaki!
I agree with the HR monitor too, at least moreso than the machine. Those things are wack.
I think your HRM is accurate unless you haven’t updated it in a whole.
Lemon curd is so yummmm!
oooo! awesome! I bet that lemon curd added such a delicious zing. Looks fantastic! HRMs are pretty accurate. Machines are not at all. The most accurate HRMs are the ones with a chest strap though. It seems a touch high but Id be more inclined to go with what your HRM said. I always ignore the machines=) I hope you have awonderful day hon! Love your site!!!
Usually HRMs are more correct than machines, especially because you could not enter in your height, weight, and/or age. Those are MAJOR factors in figuring out caloric burn.
Love your idea of a great dinner!
That’s what I figured! It doesn’t take height/weight though, just age/sex. So I wasn’t sure!
I just had goat cheese for the first time the other day. I’m addicted!
YUM grilled cheese with roasted veggies! And pudding, so jealous of your eats!
MMMmmmm breakfast cookie??? I need one of those!! 🙂
ohmygooooooosh the spaghetti squash primavera is my fav on this page of YUM! ❤ that just sounds so insanely awesome!! Must try it! =)
Happy WIAW!!!
Woooo yay for working out! Glad you’re able to do that again! All of your food looks delish, as always. 🙂
machines always seem to be pretty high. As much as I WISH they were always right 🙂
I’m going to have to check out that banana pudding. I love banana anything.
